a good cook will remember and can also predict how it is cooked and inkoti cheyyi mahatyam plays big role..for example oka youtube video chusi pette popu ki oka expert cook pette popu ki chaala teda vuntundi.. its texture and right amount of heat and many more..

to me cooking is an art even cooking talent kudaa genes dwara vasthundi ani maa intlo vaalla feeling.. daaniki big example nene anukuntaaru vaallu.. :-)

My take on the topic:
It's like chemistry...have a basic idea...and mix and match ingredients and over a few times everyone gets better at it. It depends on number of tries.
Iam personally good at non-veg cooking,which is easy, but the real test of a cook is to cook simple daily food that's consistently tasty...I find cooking simple curries challenging.

Recently I have switched to cooking in bulk for fun. Every year 400 people ki chicken curry etc for local Bonalu festival. And for 250 people for bathukamma Dasara etc. And any local party for 60-100 people, single hand Ganesh.

avakaya majjiga recipe:
take curd
pour some water and stir with kavvam only...
then remove the grease from kavvam grooves, taste the grease and again stir the curd...

now after 20 minutes of chilakadam...take freshly made avakai (not priya one...home made one)
put 5 baddas into majjiga and stir again with kavvam...
put in fridge for 2 days and serve cold to ur blonde in summer.,....

Akkai. I never tried kebabs with goat meat. Reason being a little gamey and tough to cook evenly. And also tough to get tenderloin style goat meat. Anduke it is easier to cook tender meat from beef over goat.

In any case, I like to marinate meat overnight in seasoning. The lighter the seasoning the better, I usually alternate meat with onion, squash etc. Not a fan of tomato as it is mushy and adds bland juice to meat.

Grill each side for 4 min or so. Bamboo sticks need to be soaked in water for 2-3 hrs otherwise they catch on fire after they dry out.

My take - all aromatic spices should always be crushed just before cooking - no powders as you lose the fragrance

Spices are usually oleoresins - so putting fresh ground masalas in the cold oil while it is still heating releases the flavors better - and don’t let them burn

Start with this and if you need to add more pop at the end you can add powdered ones

As I said you have to train your nose and that only comes with practice:-)

Exotic desserts - yum. Plz share recipe and pics once you get them.
I still have to tread the dessert area. I dont have a sweet tooth yet. Stomach lo space unte extra leg piece tine rakam :-)

Vunkl. Simblee recipe.

First fry lamb kheema balls. I add little bit of flour, cumin, salt and black pepper for flavor. Knead the mixture well with little bit olive oil. and shallow fry in oil. Or bake. Oil fry is better as it doesn't dry out.

Pesto sauce: Grind basil, cilantro, mint and garlic cloves with pinch of vinegar and salt/pepper. Dead easy. Stays good for 2-3 days in fridge

Boil pasta. Till done. Pan lo saute the pasta with olive oil, add pesto sauce and cherry tomatoes. Meat balls add chesi sprinkle red chili pepper flakes. All set.

Not in place of - it is with yogurt ... grind to a smooth paste with yogurt and add to the curry at the end , stir well and bring to boil and turn off the stove

If you do not want the sour taste of yogurt you can grind with milk/water... depends on the taste you are going for :-)

Not a fan of just yogurt ... prefer to add one of the following ground with yogurt

These stabilize the yogurt ... you can add fresh coconut to any of these combos :-) easy and fattening option is heavy cream at the end..

I tried one recipe with carrot and coconut from Malathi Chandur book. Came really good. No complications in prep - cut and paste simple recipe

Sounds like you should start cooking only with uppu, karam as base tase enhancers. Add the other masalas once you figure out these two. Or try low quantities of other spices to begin with. Key is to keep tasting.

depends on the timing when you are adding to what curry you are adding
milk and yogurt has to be added very carefully at the end and with open lid

for example sorakaya curry or potlakaya curry or beerakaya curry we add milk at the end and turn off the flame after 1 or 2 mins when it becomes thick

same thing applies to aloo kurma adding yogurt at the end.

Cooking isnt difficult as long as u have patience and practice regularly... i do experiment once in a while.. i follow chef harpalsingh on youtube.. almost all of his recepies are awesome...

To me cooking vegetarian is very difficult compared to non-veg... Meat has natural flavor so no matter u will be able to eat it....

On the other hand veggie aithe u create the magic... :-)

No , not at all difficult- especially not in the days of YouTube instructional channels / recipes :-) trial and error ante ...go forth and conquer :-)
