Different places lo different recipes untayi - the tomatoes are my addition - back home in india they do it without the tomatoes but add a little tamarind. Regular mutton curry lagane chestanu but add a lot of tomatoes for the sour taste 2 lb paya 1 large onion - chopped 4 green chillies - chopped 1 tbsp ginger garlic paste 1 tsp coriander powder(Dhaniyala podi) 1/2 tsp cummin powder - (jeera/jeelakarra podi) 15 cloves - lavangalu 2 inch piece cinnamon stick - dalchini 2 -3 lbs tomatoes - diced Chilli powder, turmeric, salt to taste In a pressure cooker heat oil. Coarsely grind cloves and cinnamon - just to make small pieces not powder.Add to hot oil. Add onions and green chillies. Add a little salt and fry till onions turn transparent to light brown. Add ginger garlic paste - fry for 2-3 mins. Add the dhaniya ,jeera powders and stir. Now add the washed paya. Add the salt , turmeric and chilli powder and cook on high heat for 5-6 mins while stirring. Now add the tomatoes , stir and cover the pressure cooker . Let the pressure build up and cook at full pressure for 15- 17 mins. Cool, make any taste adjustments with salt and chilli powder, garnish with cilantro and serve aa chal ke tujhe main leke chalu ik aise gagan ke tale jahan gam bhi na ho, aansoo bhi na ho,bas pyaar hi pyaar pale | ||

Now that Mallik has done the commercial for my recipe , here's the recipe Keema stuffed Chicken roast... Ingredients: One whole chicken with skin. Lemon juice : 2 tsp Chilli powder : 1/2 tsp Turmeric : 1/2 tsp Salt to taste Filling : Keema : 1 lb Ginger -garlic paste : 1 tsp Onion - chopped 1 cup Green chillies - 2 chopped Cilantro : chopped 1/4 cup Garam masala powder - 1 tsp Turmeric : 1/2 tsp Chilli powder to taste Salt to taste One hard boiled egg -shelled Preheat oven to 350 deg. Loosen the skin of the chicken from the flesh to create pockets all the way to the legs and wings. Insert your fingers under the skin and separate it - be careful not to tear it . Mix the limejuice, turmeric, salt and chilli powder and apply it to the chicken inside the cavity, between the skin and fless and on the the skin.Add food color if desired. Keep aside for 15 mins Mix all the ingredients for the filling together by hand. Now carefully stuff this filling under the skin of the chicken slowly pushing it all the way to the tips of the wings and legs. Spread it evenly - put the remaining filling- should not have too much left - in the cavity along with the egg. Tie the legs together. If you have them put a couple metal skewers thru the cavity of the chicken(not mandatory )- helps heat up the inside faster. Roast in the oven for 45 mins. Then turn it over - take some of the juices that collected in the pan and pour over the chicken and roast for another 45 mins.Turn over again and roast for another 15 mins. Serve hot I sometimes roast some sweet potatoes or regular potatoes with the chicken in the pan.And some corn on the cob on a separate tray. Kids get a kick out of finding an egg in the chicken

Found the carrot cake recipe I use : Ingredients 4 eggs 1 1/4 cups vegetable oil 2 cups white sugar 2 teaspoons vanilla extract 2 cups all-purpose flour 2 teaspoons baking soda 2 teaspoons baking powder 1/2 teaspoon salt 2 teaspoons ground cinnamon 3 cups grated carrots 1 cup chopped pecans 1/2 cup butter, softened 8 ounces cream cheese,softened 4 cups confectioners' sugar 1 teaspoon vanilla extract 1 cup chopped pecans Directions Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan. In a large bowl, beat together eggs, oil, white sugar and 2 teaspoons vanilla. Mix in flour, baking soda, baking powder, salt and cinnamon. Stir in carrots. Fold in pecans. Pour into prepared pan. Bake in the preheated oven for 40 to 50 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely. To Make Frosting: In a medium bowl, combine butter, cream cheese, confectioners' sugar and 1 teaspoon vanilla. Beat until the mixture is smooth and creamy. Stir in chopped pecans.
