But that lining needs to be pure tin - there are concerns of it being an alloy containing lead .. So it's a bit iffy..

Ceramic glazes can have lead too - usually the ones used for cookware are lead free but better to get tested and certified lead free earthen cookware !



I have fear for lead. Actually, turmeric and hing lo kooda undhannaaru...hing stopped...2013 lo kid had high lead levels, that can do some damage ani cheppaaru...so very careful now.

Yes, after cooking is done. Remove the contents to a non reactive bowl (Glass or cermaic). Mostly we grill/roast and fry on cast iron pans and consume immediately so transferring is rare. A good marinated chicken roasted on cast iron will be as good or even better than sizzlers.

Brass pot for rice, is kind of a fancy thing for us :-) pooja or pandagaki theestham. Ganji varchi maggapettadam style. We don't use daily because too lazy to monitor. Everyday useki zojirushi electric ricecooker with a steel bowl.

We keep changing grains. No rice everyday. Switching between, rice, barley, sajjalu, yavalu, wild rice, varalu, buckwheat, kamut, quinoa alaaga annamaata. We replace them instead of rice for curries. Meeku interest vunte season ki thagattu kooda thinachu.

In india they always line ittadi saaman with kalaayi mixture, which makes it non toxic. As long as you don't store food for a long time and not cook anything sour in it you will be fine. We got all our pots and mookudu from parents ataka...my mom was glad to get rid of them.

Try cooking acidic stuff in mud pots. Like pulusu, it tastes great with that earthern smoky flavor.

The one's I use doesn't have any glaze. I got mine from a mexican store.

Disclaimer : I personally continue to use coated cookware for ease of use, and use glass for storage containers

Ecoli doesn't develop in copper vessels. That is why it's better to store water in one.

It cuts out the bitterness and brings out the flavor because it's porous and preserves the volatile nutrients Clay lets the steam and heat circulate unlike the metal ware. Most of our friends and even co-workers ended up buying earthernware after eating a simple paalakoora pappu made in one of these...:-)

No point in taking chance on these not so expensive things.

2)no teflon/no coatings ( so no rice cooker etc)

3)No plastics even for carrying (metal, steel)

4)BPA free plastics is a joke.

utensils clay and steel for cooking. copper for drinking water(only water). go for thicker steel if cooking is problem on thin steel, copper bottom shouldn't be an issue.

1) no no no aluminium, it leads to neurotoxicity (India dint use this crap as a utensil until british started using them in prisons to lower the iq of prisoners). Aluminium shoud be out of lives period. Al Cookers kuda marcheyyandi. NRIs might not be using them much, but your parents/family andarito aapinchandi pls. No point in taking chance on these not so expensive things.

2)no teflon/no coatings ( so no rice cooker etc)

3)No plastics even for carrying (metal, steel)

4)BPA free plastics is a joke.
