annai .. nenu vegetables cutting ki 1 hour teesukunta .. ante aalochinchu .. cooking enta sepu padutundo .. okko sari 2 hours paatu vanduta .. single curry .. last ki kanisam tinali ane feeling kooda radu .. ofcourse antha sradda ga chesta kabatti taste baguntundi .. but opika potundi .. and vanta cheste .. kitchen chetta ga cheyyadam istam undadu naaku .. so pichi pichi ga aipodu kitchen area nenu vandithe .. so okkoti organize chesukuni chesukovali ante tappadu .. taste important .. !

Veg khichdi :-)

Cooker lo oil vedi chesi - usual seasoning with mustard seeds, jeera,inguva, curry leaves, garlic and red chillies.

wash 1/2 cup each of rice and dal and add to the cooker. Add vegetables and 2 cups water . Add salt to taste and pressure cook the same way you cook rice.

Eat with raita or any pickle.


Bisibele bhath

Same process as above. While the rice is cooking - soak tamarind in some water and microwave for a min ( or use tamarind pulp)

In a cup of water mix the tamarind pulp, 1 tsp sambar powder, i/2 sp sugar and add to the khichdi - you have bisibele bhath

Recently tried a new one... Soaked and sprouted Black chana. Then ground them with ginger and greenchillies , added onions and made masala vadas - office ki teesukuvelte they were surprised that there was no meat :-) the skin adds texture and tastes great- sprouted kabatti healthy kuda :-) But a lot of work.


Vegetable patties ante - microwave frozen mixed vegetables for 5 mins.Boil a couple of potatoes. Mash and add the vegetables, grated ginger, green chillies, cilantro ...Dip a slice of bread in water and squeeze out the water.Add this to the mix.

Shape into patties and grill on a non-stick pan on both sides.

ok ok .. public demand kaaranam ga .. potato hash brown recipe prasaram cheyyadam jarugutundi .. :D

for 2 people

4 hash browns ( oka 2 mins micro wave lo pettukondi )
mirchi - nenu 4 vesta (meeku kavalsinanta) (cut chesukondi)
uppu - 1 table spoon
dhania podi - 1 table spoon (deenne aanglamuna coriander powder anduru .. adiyunu teliyadu tama mohaniki ani kota voice lo chaduvukondi ) :D
kari vepaku (curry leaves dudeeeee)
aavalu, jeelakarra (mustard and cumin seeds ) popu ku (seasoning yaa :D )
asalaindi noone - 2 spoons
pasupu - chitikedu

oka pan lo 2 spoons oil vesi warm chesi .. daanlo aavalu, jeelakarra, mirch, kari vepaku vesukondi .. hash browns ni micro wave lo nunchi teesaka .. okko daanni 8 mukkalu ga chetto vidakotti mookudu lo veyyandi .. indaka teesina chitikedu pasupu ippudu vesi .. kalapandi .. hash brown mukkallani garite thone nalapandi .. so that it becomes small pieces .. leave it for 4-5 mins on less-medium flame .. koncham heat increase chesi .. dhania powder veyyandi .. uppu veyyandi .. oka 2-3 mins lo aapeyyandi .. maada nivvaddu .. taravata super curry ready .. kavalante .. (red chilli powder tho kooda chesukovachu) .. last lo if you want .. add some lemon juice to taste .. in less quantity ..

simple .. but very tasty ..

note - hash browns lo oil untundi .. so do not add much oil while preparing

1 glass rice, 2 glass water, one chopped onion, 2 table spoons oil, one spoon chilli powder, one spoon pasupu, small amount of jeelakara, aavalu, pallee..

take a bowl heat oil and pour chopped onion and jeelakara aavalu, pallee. then pour chilli powder, pasupu. then pour water and mix it with spoon. then pour the rice and mix it.
eat with aavakaya pachadi, heaven at your door step

cabbage fry with yougurt

thinly slice and dice cabbage. place it in a bowl. add abou 100 ml of water. pressure cook it till the first whistel comes

heat oil,add channa dal,urad dal, cumin, add cabbage.

if you have tomates, add one or two...you can also add peas if you like

finally add salt, turmerica,chilli powder

you can have it with bread or pasta or just with yogurt.

Wheat vegetable dosa :


Mix whole wheat flour ( chappatti) , water , jeelakarra , salt and chilli powder to make a dosa batter.

Heat a non-stick pan - pour batter on to make a thick dosa.
Top with chopped onions and even vegetables like carrot, cauliflower, green beans, green chillies .
Cover and cook the dosa on low to medium heat.fold over and cook on each side :-)

Instant chutney :

Whole Wheat Pasta

Pasta is a favourite comfort food -- it's quick and easy to cook and always tastes good. But with all those carbs can it be healthy too? You bet! The trick is to use pasta made of whole wheat and by adding more lean protein and vegetables into the mix. Whole wheat is a rich source of fibre which helps lose weight and also lowers the risk of diabetes and cardiovascular diseases.

Recipe

Boil the pasta in salted water. Once cooked drain the water.
Mix together oil, vinegar, tulsi (basil), oregano, salt and pepper and keep aside.
Take another pan and saute capsicum, garlic, broccoli and carrots till soft.
Pour the cooked vegetables into the pot with the pasta.
Pour the vinaigrette (mixture of vinegar, oil and other herbs) over the pasta and vegetables. Toss to distribute vegetables and vinaigrette evenly.
Other than the recipes above, there are many others that you could try your hand at such as whole wheat / multigrain bread sandwiches, roasted / steamed vegetables, soups made of tomato / sweet corn, etc.

Oats Upma

What better way to gain the strength and energy to carry you through a hectic morning schedule than with a steaming bowl of freshly cooked Oats Upma. Oats, with their high fiber content, not only help remove cholesterol from the digestive system but also act as antioxidants and thus reduce the risk of cardiovascular disease.

Recipe

Roast the oats in a pan without oil for about three mins and keep aside.
Heat some oil in the pan and add urad dal (black gram), chana dal (Bengal gram), mustard seeds, green chillies, dry red chillies and fry for some time till the dal turns golden brown. Now add sliced onions, minced ginger and curry leaves.
Saute the onions till they are tender, add asafeotida and salt.
Add water and boil for a minute or two, then add the roasted oats. Keep stirring till all the water is absorbed and oats are thoroughly cooked.
Serve hot.

Lemon Coriander Soup

Fragrant lemon juice and piquant chillies make this clear soup very appetizing. Coriander lends its own distinctive flavour and freshness to make this one-of-a-kind soup. While lemon works well with its antioxidant and anti-cancer properties, coriander works as a good anti-diabetic.

Recipe

In a pan, heat some oil and saute finely chopped onion, spring onions, ginger and garlic till they are translucent.
Add vegetable stock, coriander stems, cabbage, carrot cubes, coriander leaves and crushed peppercorn and bring to a boil.
Strain the water and bring it to boil again, add salt and lemon juice.
Garnish with chopped coriander leaves and serve hot.
