hyd la undi mirchi ka salan telvadhu antey zara sonchayinchaaley. last time oka sari try chesa with those big mirchi's(asta vankaralu tirigi untadi kadha) available in subzi mandi. Recipe is same as what Neel mentioned. Just like Anand ji, we too add curry leaves and methi. Amazing taste  |

Cub foods and some organic places used to have fresh ground peanut butter - just like coffee grinders filled with roast peanuts- just grind chesi coarse paste by weight ichevadu Loved the convenience.. Dum biriyanis ki all round heat ki lid paina hot coals pedataru - Oven simulates that all round heat - konni cream based veg pulaos kuda - rice texture comes out better when you finish up in the oven - ofcourse personal taste anukondi... Anand_n garu when you said you are from Malakpet then itself I thought you allready know the recipe. Iam not a big fan of Oven, I like the taste better cooked on gas flame compared to oven. I bake Fish Cutlets and Chicken Drumsticks in Oven. in my recipe I used methi powder instead of methi seeds. I add onions while mirchi is cooking too for more gravy. I think Peanut butter gives sweety taste, thats why I dont use. |

Thanks Neel Compare chesukundam recipes ani adiganu I add onions to the gravy too... Naaku party cooking ekkuva for 50+ people - so oven ekkuva use chestanu...makes it faster, more efficient and requires less supervision/stirring- no worries of adugu antatam Dry masalas anni tray meda spread chesi - oven lo 350 deg 20 mins vadileste roast ayipotayi In the meantime I fry the onions and ginger garlic and grind everything together... Another change - when frying the chillies/brinjals - I add the seasoning of curry leaf and methi seeds(menthulu/fenugreek) , sprinkle a lil salt on the veggies and saute them..manchi flavor vastundi... Fry ayyaka add masala , bring to a boil and malli oven loki for 30 mins Quick tip : If you get organic coarse peanut butter (no syrup added ) you can use it for gravies like this and even instant peanut chutney for idli/dosa aa chal ke tujhe main leke chalu ik aise gagan ke tale jahan gam bhi na ho, aansoo bhi na ho,bas pyaar hi pyaar pale |

Mirchi Curry (Masala) (just like Bagara Baigan) Mirchi (Long Hot or Bajji Mirchi) Don’t use Serrano or Thai Peppers. Quantity 1 lb or ½ lb First wash them and dry them paper towel tho thudavali Then make a slit in vertical remove the seeds. Seeds vunte chaala kaaranga avutundi curry anduke teeseyyali Thodimalu vunchali cut cheyyoddu. For Bagara Baigan Same thing with small round brinjals(Bagara Baigan) We have to cut them diagonally not all the way down. Deep ga brinjals cut chesthe mukkalu ga voodipothayi. Keep them aside. Prepare Masala Peanuts 3 tablespoons Zeera 1 Teaspoon Sesame seeds 1 Tablespoon Kash Kash(gasalu) 2 teaspoons Dry roast them on small pan with low flame. Let them cool Tamarind juice may be ½ cup Ginger garlic paste 2 to 3 teaspoons Coconut powder 1 teaspoon Haldi ½ teaspoon Michi powder 1 to 2 teaspoons according to your taste Salt 1 to 2 teaspoons according to your taste Garma Masala quarter teaspoon (less then ½ teaspoon) Methi Powder 1 or 2 pinches(chitikedu- very less) Take 1 medium onion and 2 or 3 green chilli(Serrano or Thai) Cut them into small pieces and fry them in 1 tablespoon of oil Let it cool down. Mix all the above ingredients and blend them in wet grinder or Hamilton Beach grinder. Without the tamarind juice water it wont grind,. If you think it is too thick mix may be 3 tablespoons of water. This paste should be soft. (make sure the sesame seeds blend finely) leka pothe curry taste vuntadu. Take a shallow pan or non stick pan, in medium flame pour 1cup of cooking oil(oil ekkuvavunte curry taste will be good) After the oil gets heat, put the Mirchi(slit chesinavi) thodimalato vundali don’t take the thodimalu out ee mirchi ni vesinaka put a lid, the oil will spill and splatter all over so cover it with lid Let them boil and cook in oil for few minutes turn them over and let them cook until they turn light brown(don’t make them brown) Then pour the masala from the blender into the pan on the mirchi cover the lid and let it cook on slow flame for 5 minutes, adugu maada kunda choodali.(masala cook avvali) Garnish with finely chopped Mint and Coriander leaves. This curry will stay fresh for atleast 10 days in the fridge if you cook properly Enjoy with Baigara Rice or Biryani or Naan Roti.  |
