I forgot to mention one last thing in the recipe you have to add fried onions(we get those in Indian stores), and boiled eggs cut into half verticall on top of the Biryani Rice after everything is cooked. |

Kish First of all this is my garam masala recipe this you can use in all non-veg curries, bagara baigan, mirchi ka saalan and in all kurmas and in Fish Fry, Fish pulusu and egg pulusu Ingredients all in equal portions try with 2 teaspoons 1. sahzeera(sahzeera looks like jilakara but thin smells good) like 3 to 4 teaspoons 2. 2 teaspoons cloves(lavang) 3. 2 teaspoons Elaichi 4. 2 teaspoons Daalchin Chekka (make it into small pieces) fry all these (light ga dry vi penam meda laka pothe chinna ginna lo venchali dont use oil just dry spices (maadanivaddu just for few minutes until you smell the spices) let them cool down and put them in cofee bean mill dry grinder (small one) this powder will stick to the walls of the grinder(use plastic spoon and empty all the powder on to one newspaper or soft paper) grinder loni powder tilt chesi paper loki empty chesi clean bottle lo store chesuko this garam masala powder will be very strong so you have to use may be 2 to 3 pinches(may be less than 1/4 or (quarter) teaspoon for 2 lb meat) this is the recipe of garam masala used by Hyd people, Andhra Rayalseema people dont use Sahzeera my friends told me and I have seen thats why they dont get Hyd taste of Non veg and Biryani This garam masala powder stays fresh for long time if stored in airtight container, I know most of guys dont close lids tight while cooking all they are worried about is when the food gets ready and eat. I learnt cooking biryani from my childhood friends who I grew up with(mostly muslims in Malakpet) Do you want me to give that recipe it is similar to yours but we have to add more ingredients to marinated meat the meat has to be cooked in separate vessel or Indian Pressure cooker for 1 steam also I add other things like freshly cut onions in (rounds) mint, lemon juice, etc, etc..... If you want more tasty I can tell you. My recipe tastes like Madinah Biryani. We always make Mirchi ka saalan, and Hyderabadi Raita and Kurbhani ka meeta whenever we make Biryani} |
