I learnt cooking biryani from my childhood friends who I grew up with(mostly muslims in Malakpet) Do you want me to give that recipe it is similar to yours but we have to add more ingredients to marinated meat the meat has to be cooked in separate vessel or Indian Pressure cooker for 1 steam also I add other things like freshly cut onions in (rounds) mint, lemon juice, etc, etc..... If you want more tasty I can tell you. My recipe tastes like Madinah Biryani. We always make Mirchi ka saalan, and Hyderabadi Raita and Kurbhani meeta whenever we make Biryani |

Fried onions kosam..intlo chesthe best flavour vasthundhi..kaani time consuming effort.... Desi stores lo u will get fried onions...kaani smell different gaa vasthundhi..ndhuku I dont like them... Usual grocery stores lo ( Giant, Safeway, Shoppers ilantivi) stores lo u will get French Fried Onions in a tin...chaala better than desi ones...i use these french fried onions... |

FOr me making a biryani is simple than making any curry...chaala easy gaa vuntadhi ..good thing abt making biryani is its not needed to spend time at kitchen..simple gaa mana work chesukuntam while its cooking..1 hr tharuvtahaa check cheyatam..atipothe tineyatam....simple... |

idhi naa recipe ani cheppanu..kaani eppudu perfect gaa kuduruthundhi..ninaa night mari awesome... this is how Hyderabadi Biryani is made..either Mutton /CHicken..ippudu cheppe recipe lo replace mutton with chicken... Preparation : 10 mins. Cook time : 1 hr (for mutton, chicken ayithe 40 mins..) Marination: 1 hr chesthe better..time lekapothe 30 mins..or 10 mins...entha marinate chesthe antha tasty..since manaku dorikedhi frozen/Cold mutton kabaati marination entha chesthe piece antha tasty gaa vuntadhi... Ingredients: Mutton (prefarably GOAT, smell raadhu) : depends on no. of ppl Oil Ghee Whole Garam Masala (Cloves,cardomon,bay leaves,elachi) Garam masala powder Mint (pudhinaa) Cilantro Ginger/Garlic Paste Curd CHilli powder Green chillies Dhaniya powder fried onions Turmeric powder Biriyani mix powder (not needed , but just to make spicy..1 teaspoon kaana ekkuva veyakandi..already manam Garam masala vesthunam..nenu SHAAN biriyani mix vesthanu..DOnt use 'Parampara' ) Salt (chaala takkuva veyandi..malli rice lo vestham) Basmati rice Painaa chepinaa ingredients taste ki thagatu vesukovali...I cannot give u accurate measure...depends on mutton quantity..and the no. ppl.. and also ur taste preferences... Suggestion entante...powders ani taakuvane veyyandi... Ingredients ani mutton ki add chesi (except for RIce and Ghee)...marinate for 1 hr Rice kooda water lo soak cheyali..say 30 mins.. After 1 hr..okka bowl lo water heat cheyandi...boiling avuthunapudu add bay leaves, elaichi (this is for extra flavor..optional) , Salt ( chaala important..water salty avakundaa vesukovali..), koncham ghee (so that rice will not be sticky..) Ippudu add rice to water...chaala careful gaa vundali..hardly okka 7-8 mins lo 50% cook avuthadhi...ee 7 minutes chaala careful gaa choosthu vundali... 50% cook ante enti: rice shape loki vasthundhi..kaani middle lo inkaa hard gane vuntundhi..fingers tho press chesthe easy gaa break avali..paste ayithe its more than 80% cooked..so be careful (Tip: nenu 40% avagane teesesthaa..so that rice will not get overcooked while cooking on steam for Biryani..) Marinated meat anthaa okka thick untensil..lekapothe if u have a frying pan..dhaani meedha pettali..to make the bottom thick... even gaa spread chesi marinated mutton..add this rice...aa tharuvathaa remaining ghee veyali on top of rice...also some fried onions, cilantro (optional) ippudu 1 hr simple flame meedha cook cheyali..see that steam should not escape ..lid ni tight gaa seal cheyali...I dont use any dough to seal..just lid meedha baruvu pedathanu.. after 1 hr check if meat is cooked...(tip: mutton cook avagane u will get some great smell..thats the indication u have to check whether meat is cooked or not..) |
