Entikabur bro ...interesting Tidbit...my grandmother was a lifelong vegetarian...never ever tasted meat in her life..but she would cook a thousand different non veg dishes for us....and they were always perfect...after she is done cooking a nv dish she would call one of us...me, my siblings or cousins or my uncles or aunts....to taste....and tell her about the salt.....I think she did that to make us feel invOlved loll...because it was always perfect |

combos avoid cheyandi. go by theme. this meal is meal oriented dinner. so enjoy meats, go lo on carbs, cut dairy completely, sweets very sparing or avoid. drink coffee or wine. this is acidic theme. for desserts use an acidic fruit like pineapple or papaya or fresh mango. if the meal is grain oriented like a biryani or south indian meal, eat less meat, eat a good raita (calcium in raita digests carbs quickly), enjoy a lot of cooked vegetables, cooked legumes like dhals lentils, pickles, fresh herbs, sweets, lassis, gulab jamuns jilebis rasmalais etc. drink a chai. now dont you think most of our traditional full courses are carefully well balanced? onions/garlic are interesting- uncooked they produce acid, cooked they neutralize acid. most greens uncooked produce acid like coriander, arugula, parsley, but cooked they become ineffective or acid killing. spices like cloves, cardamom, nutmeg, mace, cinnamon produce acid in any form. many ppl get heartburn from spices because of that. pepprmint oil relieves stomach pain mostly because it produces acid quickly to digest acid req foods. maalox/roloid etc work the opposite way to kill the acid through magnsium to relieve acid burn. ph is one dimension, vedi is another dimension. ph is basically to get the stuff out of stomach into the digestion. unless the food mix is in right PH it wont move it into the intestine, which is what we call indigestion, being stuffed, etc. lets take that recipe. royya+telega pindi will digest quite easily on its own actually because it is mostly fat and not much protein like in a steak, and also some fiber. what would mess with it is a highly alkaline dish such as cabbage fry or spinach-green peas, or a fried rice. instead, i will add a lot of fiber with acid like pineapple or asparagus. you could also add whole grain rice or bread. good to add fiber for absorbing fat on its way out. basic rule is, when you are eating meats, scale back on carbs and dairy and some signature alkaline stuff like spinach, cabbage, okra. once you eat that, it raises the cholesterol and metabolism which we call "vedi". to cool it down, after afew hours eat a cuke raita or lime soda. stomach has a PH Metering mechanism [I think], so it determines the pH and produces adequate quantities of acid. you train the stomach do that. many natural foods are self balancing. if not foods, many recipes, if not recipes, meal courses are self-balancing. there is a lot of science behind, for example, the jewish tradition of not eating dairy and meats in the same meal. or eating cranberry sauce with a thx giving super meal, or coleslaw. or mustard in a sandwich. idea is this: stomach produces Hcl to digest meats. mouth produces alkaline saliva to digest carbs. if you are eating a lot of carbs, chew sloly so that enough alkaline stuff adds in. or throwin a dash of yogurt or a bit of coleslaw. if you are eating predominantly non-veg meal, cut back on carbs. enjoy whole load of meat. garnish it with spices like cloves and ginger highly acid producing. finish it with some redwine. or a lime drink, but do not eat an ice cream, yogurt or kheer. most ppl tend to produce less and less acid as they age, which causes digestive issues. Entikaburlu:not a good idea anand garu, spinach is highly alkaline it neutralizes the acid needed to digest mutton, which delays digestion. mutton gongura is excellent because gongura brings in a lot of acid which makes it easier to digest the whole meal.
Did not quite put it together like this but recall reading somewhere that raw spinach is alkaline - cooking reduces the pH value to mildly acidic. mee vaalakam choosi pakka braahmala pilla anukunna, myatter chala ekkuve! ayithe, ikkada oka sookshmam undi. konni foods acidic. konni foods alkaline. for example, all meats need acid to digest. all carbs need alkaline elements like calcium to digest. it is better to keep any dish acidic or alkaline, not both, which will make digestive process delayed. so mutton needs acidic, and beans having a lot of carb needs alkaline, which delays digestion. the acid produced for digesting meat will neutralize the calcium in beans which would helped the beans digest themselves. any plant based food contains all necessary ingredients to digest itself, that is why they are light after eating. for meats the body produces Hcl to digest. while HCl is in action, all alkaline material will be neutralized, and body has to produce more acid. if it cannot you get indigestion.
