Dheen akka.. impress sesav

Grilling lamb is same as steak. The only difference would be in the marinade. Lamb rack is generally more gamey than any beef cut. And to keep the smell down, I would prefer a more marinated rack of lamb over a bare essential steak.

If I would do it

Make the following marinade

4 tsp virgin olive oil
2 cloves minced garlic
1 tsp Montreal steak seasoning (my fav)

crushed pepper medley and thyme (if you want fancy - but steak seasoning subdues thyme)

Fill the marinade in a zip loc bag and toss in ur racks :p Apply the seasoning well by shaking the bag and put it in fridge for 4 hrs minimun. Overnight best.

Heat oven to 400 F and put the rack directly on the hot part of the grill such that meat faces the heat and bones face away from heat (typically towards you). Grill with lid closed for 6-7 min. Now flip the meat and grill for 6-7 min again. DO check the internal temp in the middle of the rack. I would go to 135 F at various places. After done, cover the lid and turn off the flame. Cook for 4-5 min before eating it. Red wine is a must.

Summer is here. So it is grill time. One of the easiest thing to grill is chicken breast. Buy organic chicken breast pieces. Wash them in cold running water and dry them with paper towel.

Use a moderate seasoning. Today I made seasoning using 1 tsp cajun, 1/2 lime and some coriander powder. Marinate chicken for 2-3 hrs in fridge. Coat marinade on both sides..

Heat grill to 450 F. Place chicken in the hottest part of grill and turn the flame down to 350 F. Keep lid closed. After 6-7 min, turn the chicken over. If you wish criss cross grill marks, turn same side by 90 degrees. Its personal choice.

After 7 min of cooking on one side, turn over and cook for 7 more min at same flame. Rest the chicken for 5-6 min after turning off the flame as the meat continues to cook after flame is turned off

Sides: Anything works. Preferably some carbs. Today I went with meegada perugu rice and gongura pacchadi.

Alternately veggies are healthy option, spanish rice, black beans are good. Fries would also be yummy..
