Nah - I would not try it - ikkada restaurant vadu ground lamb to chestadu but texture/taste teda vastundi... Gotcha:Bone compulsory?
Meath without bones does not have the same flavor..Traditionally they boil the bones separately and add the broth to the haleem after the meat has cooked - but I just cooked them together and removed the bones... Haleem recipe Lamb shanks (leg portion) cut into small pieces - 3 lbs Cracked wheat(dalia) -1 cup Channa dal - 1/2 cup Ghee - 1.5 cup Rose petals - handful Onion - one large sliced thinly. Whole Almonds, cashews and pista - 3/4 cup Spices : Ginger - 2 inch piece - sliced Garlic - 10 cloves sliced Green chillies - 6 sliced (depending on your spice tolerance ) Turmeric : 1 tsp Salt to taste Cloves (lavang) - 10-12 Cinnamon - 6-7 1 inch pieces javitri - 2 florets or 1 tsp Bay leaf - 2-3 leaves nutmeg (jajikayi ) - 1/4 nut Black elaichi - 3 green elaichi - 3 star anise - 3 florets Heat a slow cooker Wash the lamb and add to the slow cooker with all the spices. Wash the cracked wheat and chana dal and add to the cooker. Add enough water to het the liquid to an inch higher than the meat in the crockpot. Add salt and turmeric. Start the slow cooker on high and reduce to low once it starts boiling. I cooked it overnight - but at least 8 hours. By now the meat should fall off the bones. Remove the bones from the pot. Using a potato masher mash the meat and grains together till meat is in shreds. In the mean time, heat 1 cup ghee and fry the onions with a little salt on medium heat till the onions are brown and almost crisp.Pour the onions with the ghee into the slow cooker. Grind the nuts into a paste with a little water and add to the meat mix. Add the rose petals. Stir and let it cook on high for 30-40 mins. Check taste and add salt/chilli as needed. Top it with the remaining half cup of ghee and serve hot with a slice of lemon.
