Bread rolls Potato filling - similar to samosa filling - you can try different spices..My fav Boil, peel and mash 4-5 potatoes... Slice onions thinly - 3-4 to 1 cup Methi leaves - 1/2 cup *This is optional - you can use a little curry leaf or cilantro instead..I keep frozen methi at home to flavor many curries- use 1 cube defrosted - I like the slightly bitter flavor it adds Tomatoes - 1 large tomato chopped fine or 1- 1/2 tsp of tomato paste Heat 2-3 tbsps oil in a pan - add 1/2 tsp mustard seeds to season..As they start to sputter add 2 tsps of sesame seeds(nuvvulu )Fry for a few secs , add the methi/cilantro/curry leaves and fry till done. Add the onions , fry till transparent, add tomatoes/tomateo paste and fry till oil separates. Add potatoes, turmeric, chilli powder and salt to taste. Fry till the flavors infuse into the potatoes - take off the heat and cool... Make small oblong rolls - abour 2-1/2 in long and 3/4 inch thick. Rolls : Heat enough oil in pan to deep fry. Take bowl of water and add a little salt to it. Dip a bread slice into the water and quicly squeeze out the water laying the slice flat between your palms- remove the edges. Place a potato roll in the centre - fold the bread over to cover the potato and seal tightly - sqquezzing out excess water and ensuring tht the over lap is firmly stuck together. Deep fry in hot oil till it is a dark brown Remove to a paper towel.. Serve hot with green chutney or ketchup.. My cheese variation: As soon as you remove the roll from the pan, use a serrated knife to diaginally slice the roll. Sprinkle a mexican cheese blend on the cut(potato) side- the cheese will melt due to the heat of the roll. Caution : leaving too much water in the bread will cause it to soak up a lot of oil - so ensure you squeeze most of it out. I find it easier to just sprinkle water on the slice instead of dipping it in water the traditional way. Halva puri Make rava kesari with less ghee/oil.(the Halva in halva puri) Knead maida , a little salt, oil with enough water to make a soft dough (similar to bobbattu dought) Use the kesari as filling in the dough and flatten into 3-4 inch rounds Heat oil and deep fry these puries till a light brown on both sides Drain on paper towels - serve/eat hot Warning : Refined sugars overload The foolish man seeks happiness in the distance; the wise grows it under his feet : James Oppenheim | ||
