That is what I was asking what is the deterioration due to pasteurization- why are non-pasteurized milk products better ?
I will search the site you gave though an initial search did not turn up anything specific to ill-effects of pasteurization.

Regarding butter /ghee...
Make ghee fom costco unsalted butter but recently started churning butter at home from heavy cream. My kids love the taste of fresh churned butter...more like the butter we used to have as kids.
Ofcourse the heavy cream is still pasteurised but the butter tastes a lot better than the store bought
