Vaasana chuste you can make out if it is sweet or sour to some extent.. color and hardness is another indicator - but oko strain oko level pulupu untundi so trial and error :-)

Nanigadu ,

Gongura mutton recipe:

1 lb Goat
15 cloves
4 inche piece of cinnamon
1- 2 cardamom - elaichi

1 tbsp - dhaniya powder(coriander)
1/2 tsp - jeera powder (cummin)

2 tbsp ginger garlic paste
4-5 green chillies ( depending on spice tolerance)

Gongura - 1 bunch

Wash mutton, add salt and turmeric , keep aside.

1 medium onion chopped fine.

Heat oil in a pressure cooker ...Crush cloves, cinnamon and elaichi together coarsely - add to the oil. After it fries - add the chopped onion with slit green chillies.

Add a little salt and let the onions cook till transparent and tender. Add ginger garlic and fry till done.Add dhaniya , jeera powder and fry for a min.

Now add the meat and cook on high heat stirring for 4-5 mins. Add a cup of water, cover and pressure cook for 10 mins(depends on the meat )

While that is cooking - put gongura leaves with a 1/2 cup water in a microwaveable bowl.Cover the bowl with plastic wrap leaving a little part open as a vet. Microwave for 5-6 mins . Run this cooked gongura thru a processor ..

After mutton is done open the pressure cooker add the gongura, make any taste corrections for salt and chilli powder and cook uncovered for 5-10 mins..

Local grocery lo (HEB) - you should find it in yours too - Brown long grain rice dorukutundi - but I wash it and pressure cook it with 3 cups water to 1 cup rice - maaku konchem soft ga ishtam - podi podi ga kavali ante water tagginchukondi :-) Depends on the age of the rice too - so oka roju try cheste you will know the right amount of water that works for you :-)

Idivaraku Trader Joes lo Brown basmati use chesanu - that is good too :-)

I have not tried that yet - chesaka cheptanu :-)

But aa thread ki inspire ayyi we switched to brown rice...we like it :-) Kids ki matrame white rice use chestunna :-)
