Here you go 5-6 small to medium sized karelas < 6" long Salt 2 tsp tamarind pulp (store bought ayite 1/2 tsp ) Peel/scrape the karelas till most of the skin is off. Make a slit on one side and remove seeds.Wash the karelas.Rub salt inside and out. and leave them aside. Prepare stuffing per instructions below - while the karelas are marinating in salt. When stuffing is ready - wash the salt off the karelas..dry with a paper napkin.Rub a thin coating of tamarind paste on the inside Put the stuffing in the karela and wrap a thread around it to hold it together.Start wrapping at one end and go all the way to the other end -its easier to puul it off after cooking this way and it holds tight. Finish all the karelas. Heat oil in a flat pan add the stuffed karelas. Stir on high heat for a min to ensure they are coated with oil on all sides. Reduce heat and cover. Turn and little every few mins to ensure the karela roasts on all sides to a brown. Its a slow process and takes time to cook through -at least 30 mins. Remove to a serving plate - untie the thread and serve with rice or rotis Onion stuffing :This is slightly dry 1 cup finely chopped onion 1/4 cup besan 1/4 tsp jeera powder 1/4 tsp turmeric salt and chilli powder to taste 2 tsp chopped cilantro Heat 2-3 tbsps oil- add the onions and saute till they turn transparent. Turn the heat down , add the besan and the dry masalas and roast on low heat till the besan is roasted (it loses its raw smell)..add the cilantro, mix and turn off the heat. Potato stuffing : 1 tsp : green chilli ginger paste 2 medium potatoes 2-3 tsp sesame seeds 2 tsp chopped cilantro Boil, peel and mash potatoes coarsely.Add turmeric and salt to taste. Heat oil - fry the sesame seeds and chilli ginger paste and cilantro Add to the potatoes and mix it in.Stuff in the karela PS: I have stuffed chili peppers with potatoes and roasted them in the oven - maybe karelas will work too - have to try the oven method for karelas some time - may be easier than watching and turning them in a pan The foolish man seeks happiness in the distance; the wise grows it under his feet : James Oppenheim | ||
