Thanks for the link.. I avoid oils in baking - prefer good ol butter :-)

Though I substitute the white flour with a better nutritional mix(whole wheat flour, powdered nuts and some white flour)and reduce the butter in the recipe if the nuts have a lot of oil - texture is not as fluffy as white flour but it is better for the kids :-)

the trick is to toast/roast them on medium heat till the moisture is gone (the drying the article talks of) - they should not ooze oil

275 deg oven lo toast cheste you will not have the issue you mentioned and they taste good and crunchy
