1. Marinate mutton (after thorough washing) mixing Allam-vellulli paste,Pasupu, kaaram,uppu and koncham nunaa...
2. Wash gongura aakulu and in wide pan cook them. After a short while aakulu will be shrinked to smaller size, then add little qty of water and mix it good. As the water melts add little qty of water and again mix it. Repeat this process in a low heat until gongura becomes like fine paste (koncham leafy leafy ga vundali)

3. Oka Pressure cooker lo nunaa vesi, andhulo oka 4 lavangalu, 1" dalchini chekka,2 yalukulu vesi veyyinchi, appudu andhulo marinate chesina mutton ni veyyali...baaga thippali...inkoncham kaaram or salt veyyachu thaginantha..

4. Pressure cook mutton for 4-5 whistles and let pressure ease of

5. Start cooking mutton without lid and let it get heated

5. Oka bowl lo 3-4 big spoons of perugu vesi, mash chesi, mix it onto cooking muton and mix real good

6. Add Cooked and mashed (should be grained) Gongura, followed by coriander power to this mixture and stir it consistently

7. Prepare Garam masala - 15-20 black pepper corns, 4-5 lavanga, 1" dalchini, few jeera, few Shah jeera ....coarse them into a fine powder in blender

8. Finally add above prepared garam masala (2-3 spoons) to the cooking mixture.

9. Cook on low heat for next 15-20 min until oil starts oozing out

ccdb excel nunchi:
Wash the meat(2 lbs) add salt , turmeric, chilli powder and keep aside.

Heat oil in presure cooker- coarsley crush 20 cloves and 2 inch cinnamon stick- add to the oil.

Chop one large onion and green chillies finely
Add the onions and green chilli together and fry till transparent/tender ( adding the chilli with onion prevents the curry from becoming sweet from the onion)

Now add the ginger garlic and fry till ginger is cooked .
Add 1/2 cup beaten yogurt cook till transparent.

Add 1 sp dhania powder , 1/4 sp jeera powder, a handful of chopped cilantro and fry a little.

Now add the meat and stir fry for a little time till seared (changes color ) and the juices run out and dry up.

Heat 2 cups water on the side and add to the meat. bring to a boil and pressure cook for 12 -14 mins.

Turn off the heat , let the pressure go down.

Now check taste , make any salt , chilli adjustments .Add fresh cilantro- ready to serve with lemon and rice.

Variation for korma : Grind 1/4 cup fresh coconut and gasalu and add to curry after pressure cooking and let it boil for 2-3 mins before adding cilantro.

onions, mirchi, ginger garlic paste, cinnamon, bay leaves,cloves vesi oil lo fry cheyali
after the onions become brown add the mutton and some salt put the lid on lite flame
on side clean and cut the gongura and then
boil some water put gongura in boiled water
drain off the water and put it aside after it boiled 5 minutes
Mutton 75% cook ayyaka add boiled gongura before 15 minutes
Add tomatoes before 10 minutes
add gasalu(fry them on pan and grind in mixie)
Add cilantro and mint.
check salt and add if required
