Anand: Ayina idi reduced - ghatu ante na 10th class time lo family friends intlo curry - and her recipe called for 10 cloves per pavu kilo mutton ante 2 lbs ki 40 :-) ee lekkato currychesi danilo avakayi lo oota(oil/mukkalu teesesi just the red stuff) add chesi cook chese vallu - intense stuff but you mix one spoon of gravy in a cup of rice :-)

Ayina idi reduced - ghatu ante na 10th class time lo family friends intlo curry - and her recipe called for 10 cloves per pavu kilo mutton ante 2 lbs ki 40 :-) ee lekkato currychesi danilo avakayi lo oota(oil/mukkalu teesesi just the red stuff) add chesi cook chese vallu - intense stuff but you mix one spoon of gravy in a cup of rice :-)  |

Aadi vaaram Madhyanam anand_n vaari mutton curry tho bhojanam here is the receipe....nene chesthunna Wash the meat(2 lbs) add salt , turmeric, chilli powder and keep aside. Heat oil in presure cooker- coarsley crush 20 cloves and 2 inch cinnamon stick- add to the oil. Chop one large onion and green chillies finely Add the onions and green chilli together and fry till transparent/tender ( adding the chilli with onion prevents the curry from becoming sweet from the onion) Now add the ginger garlic and fry till ginger is cooked . Add 1/2 cup beaten yogurt cook till transparent. Add 1 sp dhania powder , 1/4 sp jeera powder, a handful of chopped cilantro and fry a little. Now add the meat and stir fry for a little time till seared (changes color ) and the juices run out and dry up. Heat 2 cups water on the side and add to the meat. bring to a boil and pressure cook for 12 -14 mins. Turn off the heat , let the pressure go down. Now check taste , make any salt , chilli adjustments .Add fresh cilantro- ready to serve with lemon and rice. Variation for korma : Grind 1/4 cup fresh coconut and gasalu and add to curry after pressure cooking and let it boil for 2-3 mins before adding cilantro. |
