The fact/legend remains the same - she raised her kids as a single parent after being deserted by her husband..and did a darned good job of it 
If it offends people to think of Sita as a single mom and they want to find sugarcoated euphemisms for that - they are welcome to their versions
I am interested in why you think the single mom definition does not fit Sita, though - is it just a resistance to accept the moodern(?) term w.r.t Sita or a real tangible difference ?

I know Uttara kanda is considered a later addition - do you have any references or versions of Ramayana that tell a different story post pattabhishekam - I am open to reading that version too
