Ma families lo - both mine and inlaws - nv almost 5-6 days a week untundi- so variety kavali..hence the wide range of seasonal nv preparations.. Plain nv aite inko veg koora vandali - mix aite one dish does the trick :-)

Tomatillos - pachadi laga chestamnu - good idea for mutton.

I don't like cooking chicken with sour stuff - it toughens the meat and makes it dry...chicken lo tomatoes kuda chala takkuva vestanu :-)

DO you add the tomatillo pulp on top after the chicken is cooked ? That may prevent the texture change :-)

Vegetables /dals added to NV - tone down the spicy masala taste...

The idea is to get the kids to eat more of the vegetables - so I keep the curry mild as then they mix more in the rice. Ghatu ga unte konchem kaluputaru and the veggie intake reduces..:-)

Oka chicken or 2 lb mutton lo - sneak in 1 cabbage, or a box of costco mushrooms, a half bag of costco spinach, 2 bunches menthi koora ,8-10 large tomatoes alaga veseste - teliyakunda tinestaru :-)

Yes - but for Cabbage mutton - you have to pressure cook the mutton with salt , chilli powder and turmeric in a separate vessel with in the cooker to prevent too much water in the meat before hand and then follow the recipe.

For zucchini mutton -you can do one of two things - add a liitle water and the pressure cook step instead of the step "Reduce heat, cover and let it cook for 5- 10 mins. " Keeps zuchini separate.

Or you can pressure cook after adding the th zuchini - it dissolves into the gravy :-)

Zuchini chicken :-)

Small
1 whole chicken- cut up for curry.
6 -8 zucchinis chopped fine
Wash chicken and drain. Add turmeric, salt and chilli powder mix and set aside.
In a thick bottom pan add a little oil.
Crush about 15 cloves and 2 inch cinnamon stick and add to the oil.
Add chopped onion and green chillies and fry till the onions are tender.
Add the chicken and fry on high heat stirring till seared on all sides.
Add 1 heaped tsp coriander powder, tsp jeera powder, 2 tbsp ginger garlic paste and fry for a couple minutes.
Reduce heat, cover and let it cook for 5- 10 mins.
Now add the zucchini, stir, cover and cook stirring intermittently till the zucchini is cooked. Adjust salt and spice as need.
Add 1/4 cup cilantro, stir , add salt or chilli powder to taste and serve hot with rice or rotis.

Note : Finely chopped zucchini cooks down to a mush - making a thick gravy and my kids like that. You can also keep cut the zuchini in larger pieces to to keep them seperate.

1 medium sized cabbage – chopped finely-- either red or green work.
Wash chicken and drain. Add turmeric, salt and chilli powder – mix and set aside.

Add a handful of curry leaves (torn or chopped ) and stir.
Reduce heat, cover and let it cook for 5- 10 mins.
Now add the cabbage and fry stirring intermittently till cabbage and chicken are cooked thru.
:-) Note: I use chicken with skin and don’t use oil at all – just add the masalas and chicken together- the fat from the chicken is enough. You need oil if you use skinless chicken.

Serve hot with rice and rasam:-)

Finally got some time to type some recipes up.

Conquas:

Here the recipe for Veg balls in hot garlic sauce :-)

for the Veg. balls
1/2 cabbage grated
2 carrots - grated
handful of green beans - chopped finely
1 tsp grated ginger
1 tsp chopped green chilli
Salt to taste

Mix all of the above in a bowl and set aside for 5-10 mins.This will cause the juices to run out.
Squeeze out all the juice into a separate bowl and keep aside.
To the grated vegetables , add 2-3 tbsp corn starch to bind.
With a firm hand make 1 inch balls with this mix and set aside.
Heat the oil to deep fry.
With 1 cup of the veg juice , add 2 tbsp all purpose flour and make a thin batter. Do not make it thick else you will have a thick shell on the balls.
DIp the veg ball in this batter and fry in the hot oil till browned.
Set aside in a serving dish.

For the sauce.
2 tbsp : finely chopped garlic
1 tsp : crushed red pepper
1/2 tsp : whole black pepper (crush coarsely)
1 bunch spring onions - chopped fine (use both the greena and white part)
4 oz. tomato sauce (Hunt's)
2-3 tbsp soy sauce
1 tsp corn starch mixed into the remaining juice from the vegetables.Add water if needed to make the liquid about 1.5 cups.

In a pan add some oil.
To the cold oil add the garlic, red pepper and black pepper and start heating.
Once the garlic is frying add the spring onions and fry till tender.
Add the tomato sauce and soy sauce and bring to a boil.
Reduce heat to low, add the juice with the corn starch and cook stirring till the sauce thickens.
Adjust salt and chilli pepper and pour over the veg balls.
Serve hot with noodles or fried rice.

Note - using the juice and batter are something I came up. I use the juice so as to not waste the nutrients and it also gives more flavor to the sauce. Original recipe uses water.
The batter was again a step I added to minimize the cornstrch needed to bind and to prevent the balls disintigrating in the oil. You can just add more cornstarch to the vegetables and bind fry like that - they turn out more starchy and doughy:-)
