Recipe number 2. Ingredients : 1 whole Chicken cut up (about 3.5 to 4 lbs) 4 cups basmati rice bay leaves : 6-8 1 medium onion (sliced thinly) Masala: 8-10 green chillies slit (or to taste) 1/4 cup mint leaves 1/2 cup cilantro chopped Tomato - 1 (chopped) Ginger garlic paste : 2 heaped tbsps yogurt : 1 cup Lime juice : 1 tbsp Dry masalas : cloves : 30 Cinnamon : 3 inch roll Javitri : 2-3 flowers jajikayi (nutmeg) : 1/4 nut star anise : 1 star black(large) elaichi:2 Grind all of the above masalas (dry and green) together with salt. Divide the masala into two portions Wash the chicken, add little salt, turmeric, chilli powder and one portion of the ground masala mix. Wash the basmati rice, drain , add the other half of the masala mix and 2 cups of water and leave it to soak. Heat oil, fry bay leaves and onions till brown. Add the chicken and cook on medium heat till masala is fried and chicken done. Now add 4 cups water , bring to a boil and add the marinated rice with all the liquid.Make any taste corrections needed and cover and Cook till rice is done.. Have a couple of them... Wash the chicken, add little salt, turmeric, chilli powder and set aside. Wash the basmati rice, drain and leave it to soak in 4 cups water Heat oil in a thick bottom pan or pressure cooker. ADd the bayleaves and dry masala and fry till fragrant. Add the onions and chillies and a little salt and fry till the onions start turning brown. Add the ginger garlic paste and fry till the raw ginger taste is gone. Add the beaten yogurt and fry till the water dries up.. Now add the chicken and cook stirring till seared on all sides . Reduce heat , cover and let it cook for 5-10 mins. Taste and make any spice/salt corrections Now add mint and cilantro and fry for a min till flavor infuses... Add 2 cups of water and bring to a boil.Add the lemon juice.. Add the soaked rice with the water , stir bring to boil , taste the water to ensure correct levels of salt and chilli.. no this is a little bit more labor intensive. Godhumulu nanabetti , grind chesi , palu teestaru..leave this milk to stand for an hour and decant the transparent water that floats up.
