Urumi:recipe pleeezz
Lunch break put to good use typing the recipe up for you Kachori Ingredients for the filling: 1/2 cup pesarapappu 1/4 cup minapa pappu 1 tsp jeera 1 tsp saunf 1 tsp dhania powder 1/2 tsp turmeric 1/2 tsp chilli powder (increase to tatse) 1/2 tsp garam masala powder 1 tsp amchur (dry mango powder) Pinch of hing/inguva 1 sprig curry leaves chopped fine. 2 inch piece ginger 4-6 green chillies (to taste) Ingredients for crust: 2 cups all purpose flour. 1/4 cup oil/ghee salt to taste. Method: Wash and soak the dals together for 1-2 hours ( do not soak more than that). In a bowl, mix salt and flour. Pour in the oil/ghee and rub it in to a crumb like texture. Add water and mix to a soft dough.cover and set aside for 15-20 mins. Meanwhile,Drain and run thru the processor with the chillis and ginger to a coarse consistency. Do NOT add water(paste avvakudadu,Kobbari turumu laga undali ) Heat 2-3 tbsps of oil in a pan. Add hing, jeera and saunf and let them splutter. Add chopped curry leaves and all the spice powders. Add the ground dal, salt and stir fry this mixture on medium heat till the oil separates and dal fries to a brownish color. Remove to a plate to cool. Make 1.5 inch balls of the dough. Roll each out to thick puri , put 1 tbsp of the dal filling and close it firmly. Flatten it out gently by hand to 3-4 inch. Repeat with all the balls, and keep them covered so they don't dry out. HEat oil to deep fry to medium heat. Fry the kachoris on medium heat, turning over frequently till they turn golden brown. If you fry on high heat they will turn out soggy- so slow frying is mandatory. Remove to a plate lined with paper towels Serve hot with aloo curry and sweet chutney or just with sweet chutney and diced onion. aa chal ke tujhe main leke chalu ik aise gagan ke tale jahan gam bhi na ho, aansoo bhi na ho,bas pyaar hi pyaar pale |
