Inka cooking lo kindergarten to unnaru - melliga ardham avutayi:-)

Cooking is the art of balancing tastes and textures - knowing what tastes will go together and what will not :-) Culinary intellignce antaru .

Cranberries pullaga ,konchem vagaru ga untayi- you can use the cranberry puree in anything that needs the tart taste..

Substitute for gonguraor mamidikayi in different recipes and try them - color marutundi but taste is good :-)

Cabbage keema fry chesaka , konchem pulupu tagilite baguntadi anipinchi - two handfuls of cranberries chopper lo vesi add cheste - it added that tang to the fry :-)

Only change is use stir fry pan and cook on high heat till all water evaporates.. Add some masala 1 min before you turn off heat

Catalyst:

wash liver in water by adding turmeric
cut liver into medium size pieces add salt and turmeric and keep aside
heat the pan
add 2 spoons of oil
cut onion into slices
slit 4 green chillies
fry them in oil
add ginger garlic paste
add daniya powder
add garam masala(which is a mix of cinnamon, dalchin chekka etc)
stir them until they form thick paste
add liver pieces and fry them until they are cooked.




Process correct gane undi - just add the step in bold.

And add crushed black pepper with the garam masala (though I prefer using whole cloves and cinnamon crushed )

And aftr you add liver cook on med-hi heat. Whn it is almost done ad a sprig of curry leaves (torn) and fry till the leaves are cooked and the aroma infuses:-)

I140:

recipe pettandi




Standard recipe:

1 chicken cut up

15 cloves
2 inch stick cinnamon

2 tbsp dhania powder
1/2 tsp jeera powder

2 large onions
4-6 green chillies
2 tbsps ginger garlic paste

Wash chicken , add turmeric and salt, mix and keep aside.
Grind onions and green chillies together.
Heat oil in a pan,crush cloves and cinnamon and add to the hot oil.
After the masala fries add the onion paste and fry on medium heat till onions are fried and oil starts separating out.

Add ginger garlic paste and fry stirring for a couple mins
add the dhania and jeera powder, and chilli powder to taste and fry for a min.

Now add the chicken, stir on high heat till the chicken is seared(changes color) on all sides. Reduce heat to low, cover and cook for 10-15 mins stirring intermittently.

Check for chicken to be cooked through(if there is any pink , cook for somemore time. Th juices from the chicken are enough to give you a thick gravy - if its too dry add some water to compensate and bring toa boil.
When chicken is done, garnish with cilantro and turn off the heat.

For thicker gravy -Grind the onion and fry till oil separates - rest is regular curry recipe :-)
