I use catfish, tilapia or salmon...Milk fish try cheyyaledu. Bass kuda oka for curry but have not tried pulusu

bland bake eti...pappu chaaru tho yetta tinaali filet pieces with skin nee oil, uppu , karaam, nimmakaaya, pasupu, dhaniya powder etc tho marinate sesi pakkana pettali foil kee light gaa oil spray sesi put fish on foil...top off with cilantro and "only one" slice of lemon wrap snugly and put on grill (~350-400) one inch thickness filet needs 10 mins...ee leknna timer set and eat it indulo varieties try cheyaali inka like crusts with nuts, other spices, chutney topping etc |

Not that finicky about it I have to try catalyst's recipe sometime. I do not use garam masala ( cloves/cinnamon) in fish curries. My chepala pulusu reecipe... Wash the fish pieces, mix in salt, chilli powder and turmeric and put aside. Chop a large onion finely(about 2 cups of chopped onion) Chop 3-4 green chillies finely. Slit 4-5 green chiliis lengthwise ( this is because I like the chillies in pulusu ) Heat oil in a shallow pan (wide enough to fit all the fish pieces spreade out in a single layer) On medium heat. Add 1/2 mustard seeds, 1/2 tsp fenugreek seeds(menthulu) .After the mustard sputters, add 3-4 red chillies broken into halves and curry leaves. Add 3 tsps of the chopped onion. Fry till the onions caramelise ( turn brown) Now add the rest of the onions and chopped chillies. Add salt and cook till onions are cooked. Add 1 tsp ginger garlic and fry. Add 2 tsp dhaniya powder, 1/4 tsp pepper powder and fry. Now , add the slit green chillies, 1-2 small aggplants slit like for guttonkay, or a tomato cut into 4 pieces and fry for a few minutes. Add tamarind pulp.Add water to bring it to the right consistency. Bring it to a boil. Now spread the fish pieces in the pulusu, cover and cook till done. Do NOT stri with a spoon - Lift up the pan and shake it gently if needed. Variations : Shallow fry the marinated fiesh pieces before putting in the pulusu - holds shape better in pulusu and has a good flavor. Another flavor enhancer : Mix 1/2 tsp of chilli powder and 1 tsp of sesame powder. Heat a tbsp oil , add this powder and fry.Mix into to prepared fish. I love the aroma it imparts to the dish. Save chesukoni next time try maadi  aa chal ke tujhe main leke chalu ik aise gagan ke tale jahan gam bhi na ho, aansoo bhi na ho,bas pyaar hi pyaar pale |

Chepalani medium size pieces lo cut cheyyalndi turmeric powder tho first wash cheyandi... chepalu koncham sunnitham..so, careful ga wash cheyali... menthulo or fenugreek seeds plus onion slices oka panem lo kalchandi w/o oil koncham brown ga kanipisthe stop cheyandi vitini grinder lo veyyandi.....paste ayyevaruku grind cheyandi cinamon,cloves,illachi anni panem lo venchandi w/o oil mixie lo veyyandi powder ayyedaaka ee powder ni fishes paina veyyandi 3 tea spoons chilli powder 11/2 spoon salt 2 tea spoons ginger n garlic paste pinch of turmeric 1 spoon daniya powder fish tippa taaniki kastam kanuna means delicate kada virigipothaye ani ardham oka pedda frying pan use cheyyandi first oil vesi--baga heat ayyedaka wait cheyyandi onion and fenugreek seeds veyandi oil lo(fenu greek seeds konne vaadali..ekkavu vadithe chedu taste vastundi...be careful) marinate chesina fishes pan lo veyandi fishes ni kalipe tappudu careful ga kalupaali... koncham chinta pandu teesukondi water lo kadagandi oka bowl lo vesi water add chesi microwave oven lo 3 mins pettandi fishes color change ayyina taruvaatha...chintapadu pulusu veyyandi.... oka 3o mins pettandi....gravy koncham thick ga ayyevaruku... |

US lo dorike chepala tho manchi recipes cheppandi.. Maa intlo fish koncham takkuva cooking. T side market not big. Korra motta chepala pulusu is the best I have tasted. Both grand moms cooked it excellent. Matti kundalo cooking, marinating for overnight etc etc.. Evaranna recipes ettandi. Last week oka Goan friend valla curry ichadu kaani chappa gaa undi. And he used fish with lot of bones.. US lo evi best? Catfish, tilapia kaakunda... Pomfret? Mackerel? Veetiki karam and sinthapandu with ginger garlic ok naa? Emanna secret ingredients untaya?
