If you are looking for an alternative for kheema try using ground soya. you will find it in the same section where you would find veggie dogs(veggie version of hot dogs). I tried this before for making veggie version of Chili and tastes good, No prep work needed just add it in place of kheema. May be Anand can sugegst you more options. |

Ingredients: GInger garlic green chillies Red bell pepeprs salt red chilli powder pasupu oil lemon juice kottimeera mint. Process: I usually make this in a large quantity so I grind the ginger, garlic, green chillis and red peppers( use as many depending the quantity, this gives that rich color and a hint of sweetness. won't make ur marinade taste sweet though) seperately. Food processor works best for this but regular mixie is good too. Once these are all grinded add salt, red chilli powder(dont have to add a lot as you are also adding green chillies), Pasupu(turmeric - idi kooda konchem chalu), oil, freshly squeezed lemon juice(can also use the readymade bottled juice), finely chopped coriander(kothimeera - idi baga wash chesi dry chesi chop cheyyali), Finely chopped Mint( Pudina - same process as coriander) Ivanni baga mix chesi then jar it and keep it in the fridge or ziploc bags lo thin layer ga chesi freeze chesi store chesukovachu. Like i said stays good for a year in the freezer. I used this for pretty much all masala dishes. all I have to add is garama masala and some curd for gravy curries. Works good for Tandoori chicken as well. It is a labor intensive job but once every six months makes it worth the sweat. |

I have a marinade recipe that you can pretty much use for anything (all meats, seafood) I guess I can call this my patent.This can be freezed and stored for almost a year. stays good in the fridge too for about a month. here is the best cooking recipe i know - tried and tested- get a decent sized turkey - you can do with a large chicken also - do not cut it or stuff it. just thaw it if frozen and wash it with vinegar and then rub all spcies, ginger, garlic turmeric, a little salt etc. then take a nice dry spot in the yard. take a stick and stake it into the ground. there should be at the most 1 foot above the ground. Then place the bird on the stick, in an upright position - like a space shuttle ready to take off. now take an old metal bucket steel one, and place it over the bird. the bucket should be completely over the bird with no gap. complete ga borlinchadam annamata. ippudu coal mundu veliginchi, after the flames are gone, when they become embers, place them over the bucket and around it till half the height of the bucket. let it sit for 1 hour. take out the bird and enjoy. it will be just amazing. it is called turkey in a bucket. you can also google for it, you will see it with pictures. this is very popular here around thx giving. Okasari ila ayite konchem research chesanu - acidic conditions lo blue-green avutundi ata.Konni tips dorikayi.. and using a mix of them helped me. Leave the garlic bulbs in a hot shaded place for a 2-4 days - like the patio or garage before peeling and grinding. Thoroughly wipe and dry the ginger aftr peeling to eliminated excess moisture. Grind in a processor without adding water. Add a teaspoon of salt and some oil to the paste when grinding. This has worked for me in the past though nowadays I use the readymade paste  aa chal ke tujhe main leke chalu ik aise gagan ke tale jahan gam bhi na ho, aansoo bhi na ho,bas pyaar hi pyaar pale |

Razesh: Mee favourite spicy dish okati petteseyyandi..
Idi oka roju intlo onions ayipote chesina experiment - hit ayyindi- so became a staple Ingredients : 1 medium chicken - cut up. 2 tbsp ginger-garlic paste 1 tsp turmeric Salt to taste Wash and drain chicken.Add all the above, mix and set aside. Dry masala : 3/4 cup shredded dried coconut 8-10 whole red chillies 1/2 cup coriander seeds(dhaniyalu) 1 tbsp jeera 12-15 cloves 2 inch stick cinnamon 2 black elaichi and a 1/4 jajikayi(nutmeg)- lekapona paraledu 2 tbsp black pepper (whole) 1/2 cup tomato puree/tomato sauce( raw tomato chicken flavor/texture change chestundi - and sauce is easier too) Heat a pan and dry roast all the above masalas except coconut till crisp. Add the coconut and stir for a minute till the coconut is toasted. Cool and make a powder in the mixie. Heat oil in a pan. Add 2-3 sprigs of curry leaves(I like a lot of them) After they stop sputtering add the chicken and fry on high heat stirring for a few minutes till the chicken has changed color on all sides. Stir in the masala powder. Add 1/2 cup tomato puree and half cup water. Cook stirring on high heat till chicken is cooked. Maaku chicken urike cook ayipotundi so 1/2 cup water usually saripotundi- dry avvakunda udakataniki. Its a modified sauce with Tandoori masala- not the dry rub. baby back ribs : For Sauce: 1 tbsp ginger garlic paste 1 can hunts tomato sauce 1 packet Shan tandoori chicken masala 1/2 tsp turmeric. 1/2 tsp coarsely ground black pepper Mix tomato sauce, turmeric, ginger garlic and black pepper. Add tandoori masala to taste and adjust salt in the sauce.Add sugar if desired. Apply half of this sauce to the baby back ribs and marinate in the refrigerator overnight. Wrap in foil with the sauce and bake in a 300 degree oven for 2.5 hours. In the meantime bring the remaining sauce to boil and keep aside. Tifosi:kheema lasagne recipe
Masala Lasagna Lasagna sheets - 9 ( I use whole wheat for health ) Ricotta cheese - 32 oz Shredded mozzarella cheese - 1 medium bag. Pasta : Boil water in a large pot with salt, 2 cloves ,a small piece of cinnamon and a whole green chilly (uncut) . Boil 9 lasAgna sheets till done. Keema sauce for lasagna: 1 lb keema 1 onion chopped fine 4-5 green chillies chopped 2 tbsp ginger garlic paste 12 cloves 2 in stick cinnamon 1 tsp dhania powder 1/2 tsp jeera powder 8 oz can of Hunts tomato sauce (not ketchup) cilantro Heat oil in a pan. Crush cloves and cinnamobn coarsely and add to oil. Add grean chillieas and onion and cook till tender. Add ginger garlic paste and fry till cooked. Add the dhania, jeera powder, salt and fry for a few seconds. Add the keema and stir fry till browned. Add the tomato sauce and cook on medium heat till meat is tender. Add water to get it to a thick sauce consistency Adjust salt of spice with chilli powder.It should be more spicy than a curry to offset the cheeses. Add chopped cilantro and keep aside. Preheat oven to 350 dg. Take a 9 * 13 pan and grease it 1.spread 3 sheets of lasagna in it to cover the bottom 2.Spoon a third of the keema sauce on to the lasagna and even it . 3.Spoon a third of the ricotta cheese evenly on the meat 4.cover it with a layer of mozzarella cheese Now repeat steps 1-4 two more times finishing with the mozarella. Bake for 25-30 mins or till the mozarella melts Cut into squares and serve.

Not related to this item..but in general.... Hotel lo sesedhaniki intilo sesedhaniki comparision raadhu....apart from amount of fat and other stuff...one primary reason is the amount of heat generated frm the burner... mana intilo max 10-15k BTU......restaurant lo 50k or much more....so cooking time...quick fry...etc...match kadhu....texture ..aa look and every thing changes...the way and amount of time it takes to make it... |

Whren we cook in curry, the extra salt will take water out and make the meat very rubbery.. Adey grill or dum cooking lo water will remain and will make it better.
