Weekly 14 times millets thinebadhulu, eat millets once a day the other time alternate with chapathi, dosa, quinoa, oats etc having rice atleast 2-3 times in a week

Substitute for rice kanna better to use the flour emo - I grew up eating dhebra- (millet rotis and Puris) that are a staple in n Gujarat - but they also say not more than one or 2 days a week :-) make stiff dough with fresh methi, green chillies , jeera , oil ... flatten between banana leaves/ plastic and cook on tava ! Or skip the methi chillies and make puris:-)

Thanks - that is good to know ! I was actually interested in Teff - Ethiopian injera but that had high iron too and was hesitant to include - this helps :-)

Bought a few kgs when i went to my home town and took them back to Delhi. Millets being used as a replacement for rice is rendering the food rather tasteless. I thought it might be because of lower Sodium content, but when i checked up online, millets have higher sodium content that brown rice. I have been eating brown rice for over 10 years and am quite used to it - it still lets the fried kooralu and pulusu/ pappulu retain their taste unlike korralu.

Now i have to think of a way to consume the remaining Korralu.

and this is the reason why doctors suggest eat red meat for iron deficiency

read about heme-iron and nonheme-iron former comes from animal based food and latter from plant based food. our body can absorb hemeiron easily but not non heme iron .
total % of nonhemeiron abosorbed by body is 5% of the nutrition label.

continue copper to offset that effect you are all set..i dont see much danger from iron we get from millets.

but always remember too much of anything is bad :-)

The millet revolution - the timing of nutrition benefit marketing coincides / seems to be driven by the agri research guys to reverse the green revolution effects - e.g. gmo and pesticide dependency and move to sustainable farming ...

Not saying that’s a bad thing but the green revolution seemed like a great thing at that time too :-)
