more water is fine as you are going to drain it anyway... say 1 cup rice ki 3 cups water...

forgot... Added a spoon of ghee and fried onions top of the biryani before mixing with masala...

Recipe

Mix all the following in a bowl a day before

Chicken legs skinless, yogurt, ginger garlic paste, biryani masala (used banne nawab), chilli powder, lemon juice, pudina leaves, coriander leaves, chopped green chilies, salt and half cup oil and keep in fridge

Preparation
Soak the basmati rice in water for 30 min. Then in a vessel boil the water and when water stated boiling add this soaked rice. Let the rice cook for 5 min, do not let it fully cook. While rice is cooking take the chicken mix out of fridge and place in a wide cooking pan (picture lo unnadi)

Drain all the water from semi-boiled rice and place this semi-boiled rice on top of the chicken mix on the pan and cover the top with a cloth and put lid on it. Keep this pan on stove and heat on high for 10 min. After 10 min of high heat keep a thick flat pan on the stove and place this pan on top of the pan and keep in medium heat. Let it heat for 20 more min.

After 20 min turn off the stove and remove the cloth and place the lid back... leave it for 10 more min.

Then open the lid and carefully mix the masala and rice without breaking the rice grains shape. Tasty biryani ready...
