vindaloo is from "Vindalho"...a portuguese dish.....aloo vundadhu....desi lingo lo vindaloo antaru kabatti aloo vesthar konthamandi....original dish is with pork.....desi version can be anything... |

http://i.imgur.com/GNI6qAg.jpg Mutton (lamb) Vindaloo It is a Goan dish and following are the ingredients and the procedure I use the approximation in cooking and just mentioning what I have used Ingredients: Mutton (lamb) pieces with fat - 2 lb Dried red chilies - 6-7 Whole pepper - 2 tbsp Cumin seeds - 2 tbsp Mustard seeds - 2 tbsp Ginger - 1 inch piece Garlic - 6-7 cloves Cloves - 6-7 Cardamom - 4-5 Cinnamon - 1 inch piece Vinegar - 1 cub Cooking wine - 1 cup Oil 3-4 tbsp and Salt to taste Procedure: Mix all the ingredients above (except mutton, oil and salt) and keep aside for 45-60 min and then grind this to a paste Mix this paste and mutton pieces and keep aside for 2-3 hrs or keep in fride for 30-45 min Heat the oil ina a cookng pan and when oil is little bit hot pour the mutton/paste mix into it and put a lid After 15 min Add salt to taste and onion pieces (optional). Cook on slow heat with a lid on for 30-45 more min.
