As people already said -east/ west face cheste they either get the sun in the eyes or their shadow obstructs sight of what they are grazing on - north south is the most comfortable angle ... as someone already pointed out is sleeping with head to north is harmful for humans why would cows naturally seek that magnetic orientation ? if we do its a conscious effort but in case of cattle we dont know if its a concious effort by them, where they feel uncomfortable in other directions, so they naturally align to the north or south.
