It is an essential part of their code business. They can sell better ads, if they know who bought when and at what frequency. In abnalytics terminalogy, it is called RFM data (recency frequency monetary). If Google knows the pattern how frequently you bought groceries and from where and what Items u are getting, Google can charge more money for their ads from the respective manufacturers to place the ads accordingly.
