Diviseema:now main cooking think bottom lo ghee vesi. equally distrbute the chicken down. on top keep the 3/4 cooked rice (1/2 of the rice) . then put the masala fried onions . then again put the remaining rice.

simple formula that i use step 1: cinnamon, black cardamom, green cardamom, bay leaves, cloves, black pepper, grated nutmeg, star anise, mace - ivanni mixe lo vesi powder cheyyi step: chiken/mutton wash chesi add perugu, ginger garlic, lime juice, salt, kaaram, coriander powder, cumin powder, oil, coriander leaves, mint leaves and garam masala powder in step1. put this marinade in fridge for atleast 24 hrs. step 3: deep fry onions (half rings) and let them cool down. step 4: soak basmati rice and cook it on stove top. add whole some cinnamon and bayleaves to the rice and cook only 50% of it (this is tricky but u will get it after 2 attempts. step5: get a flat kadai and spread all the marinade in it. Add some fried onions and then a layer of 50% cooked rice. Then add friend onions, coriander, mint leaves kewda water to the layer. then add another layer of rice which is 70-80% cooked. aadd friend onions, coriander, mint leaves kewda water to the layer again and lastly add saffron (soaked in warm milk for 30 mins) to the last layer of rice and 1/2 pound butter blocks. Step 6: turn on stove and put it little less than high (no.9) and place the Biryani kadai and close it with tight lid, it should be air tight. after 5 mins, bring down stove temp to 3 and let it cook for 45 mins (very slowly). that's it...open the lid after 1 hr and enjoy hot hotel style biryani. Believe me..it is lengthy process ..you might make it perfectly for first 2 or 3 times..but 4th time..u will never feel like going to hotel... Hope this will be helpful to someone who loves making biryani ... |

Marinade: Part 1 Chicken - 1 kg green chilli- 4 cut length wise red mirchi - 1 big spoon salt - 1 tb sp cardamom - 2 pinched (break shell and drop) cloves - 4 chakka - 1 inch ginger garlic - 1 big tb sp coriander - 1/2 bunch, thinly sliced pudina - 1/2 bunch, thinly sliced Lemon * - 1 big one, squeezed to marinade 2 Medium sized Red onions ***- Very Very thinly sliced, deep fried to brown in Oil (Mix of the portion to marinade rest for layering on rice) Yogurt - Beaten (for better results you can use Greek yogurt 2 cups) Ghee ** - 100 gm Shan Bombay biryani masala *** - 2 big spoons Garam Masala - 1/2 tb sp Mix all of them above with clean hands and let it rest overnight in fridge. Remove like an hr before you start plan to cook it. * - Good to have ** - Must & shood *** - Don't start without this ingredient(s) |

i do better than any hotel . adheee consistent ga chesthe. tha way i do. biryani rice equal amount of water with salt , little curd, ghee and biryani vidi masala's nanapettandi 20 mins. then keep on heat. 3/4 ayyaka dincheyyandi. meanwhile. chicken ki masalas , curd, salt, leamon, ginger garlic, chill power pattinchi sim lo stove meedha pettandi . this is just to finish excess water. oka bane lo ghee and oil vesi andhulo jeera, somp, malli konchem biryani masala;s onion vesi baaga fry cheyyandi with salt and ginger garlic. now main cooking think bottom lo ghee vesi. equally distrbute the chicken down. on top keep the 3/4 cooked rice (1/2 of the rice) . then put the masala fried onions . then again put the remaining rice. sim lo petti oka 40 mins marchipondi keeping tight lid. u can make chapati pindi and stick the lid tight and keep a heavy object on top of lid. after 40 mins milk lo nanapettina saffron top lo vesi inkonchem podi vesi kalipi pettanyyandi. thats all.
