There are basically two major types of Biryani. One is Pakki (pronounced pukee, with a short u) Biryani and the other is Kachi(pronounced kuchee with a short u) Biryani. Pakki Biryani is where the rice and the meat are cooked separately and then brought together moments before being served. In the Biryani chef realm this is the "easy way out." If one really wants to test their skills at cooking and be highly regarded among their fellow peers, then creating the perfect Kachi Biryani is the route to go. This is no simple undertaking. Yours truly tried making a Kachi Biryani and failed miserably. Kachi Biryani is where the meat and riced are cooked together in the same pot. This is a delicate process since rice can be easily overcooked and meat can be severely burned.

prepare potli masala put it in a linen cloth, add that to water and boil rice in that water,

this is the authentic way to prepare rice..eice will get more flavor..

Some interesting facts.

1) Half boil does not mean boiling rice to 50%. It is usually 60-70%.
2) Soak Rice in water for at least half hour before boiling. This will give you fantastic results.
3) Marinate chicken and let it sit for 1-2 hrs, this will make the chicken more tender, thereby cooking faster.
4) Chicken in USA is diff from Chicken in India. Indian Chicken will take more time, so make sure that rice is less boiled otherwise Rice will be over cooked by steam.
5) Biryani making is an art, it will take a couple of try's before mastering it.

1) wash chicken drum sticks and thigh aside
2) grind green chilly as paste
3) slightly grind lavanga,ilachi,sajeera,dalchin chekka (not like powder)
4) mix chicken with garam masala(do not add more as it may dominate),chilli paste and above powder, red chilli powder,salt,trumaric powder, ginger garlic paste, yogurt,fried onion and oil. calculate chilli as you are mixing green chilli and red chilly here.

5) half boil basmathi rice. Do not cook full. take off the water as soon as water start boiling. mix some oil and cumin seed while cooking this rice so that they do not stick.
6) put the chicken at the bottom of big cooking pan add some hot rice drained water. do not add cold water. this mixture should not look like paste. it should look like little liquid. Do not put more water.
7) Add rice at the top and close the lid. Put some weight on the lid so that steam do not escape. The flame should at high for first 10 to 15 minutes. You can reduce the flame as soon as you see steam coming out. Madipoyina smell gurinchi check cheyyandi. aa smell ragane switch off the flame.

15 minutes kante ekkuva time pattadu.. small flame mida petti rice and chicken mix cheyyandi.. and close lid and switch it off after 5 minutes.

note: 1) soak basmathi rice for at least 10 minutes before witching on the flame, watch for water bowling. And drain it as soon as you see bowling.
3) never mix cold water in chicken, it would break rice as soon as you pour rice.
