1) wash chicken drum sticks and thigh aside 2) grind green chilly as paste 3) slightly grind lavanga,ilachi,sajeera,dalchin chekka (not like powder) 4) mix chicken with garam masala(do not add more as it may dominate),chilli paste and above powder, red chilli powder,salt,trumaric powder, ginger garlic paste, yogurt,fried onion and oil. calculate chilli as you are mixing green chilli and red chilly here. 5) half boil basmathi rice. Do not cook full. take off the water as soon as water start boiling. mix some oil and cumin seed while cooking this rice so that they do not stick. 6) put the chicken at the bottom of big cooking pan add some hot rice drained water. do not add cold water. this mixture should not look like paste. it should look like little liquid. Do not put more water. 7) Add rice at the top and close the lid. Put some weight on the lid so that steam do not escape. The flame should at high for first 10 to 15 minutes. You can reduce the flame as soon as you see steam coming out. Madipoyina smell gurinchi check cheyyandi. aa smell ragane switch off the flame. 15 minutes kante ekkuva time pattadu.. small flame mida petti rice and chicken mix cheyyandi.. and close lid and switch it off after 5 minutes. note: 1) soak basmathi rice for at least 10 minutes before witching on the flame, watch for water bowling. And drain it as soon as you see bowling. 3) never mix cold water in chicken, it would break rice as soon as you pour rice. |
