Grandmas place - oka pot handg cehse vallu - every Friday they would start with a little ganji from the rice and add some fress ganji tot he pot every day.Thursday kunda dimpi , talimpu vesi charu pettevallu - hence the name :-)

Believe fermentation produces vit K which is good for the heart too :-) Kimchi Sauerkraut are very high in Vit K.

In India - when rice is left in the afternoon , take clean pot , non reactive container , use clean hands to add annam in water.

Let it ferment for 2 days

Use clean hands or scoop to mix it and , take sime rice and water out
eat with Vaamu, little oi, Vullipaya and Salt

Excellent source of B12, Iron Rich source of pre and Pro Biotic

Thats why our old timers , even suffered from many baterial diseses, have lot of stamina and energy to do hard work

Want to try again as i have B12 deficiency and i need to use good rice

Also all the traditional indian foods like Idly, dosa, pullattu etc are made fermented , the process ccoverts the unedible proterins to usful stull

Salute to Indian (world) Traditional food which has lot of scentific thought behingd i based on type, seasons , etc
