My family likes it - and actually it is better in oil consumption too- Oil is optional in the recipes ... Meat , massala kalipi without any oil on high heat saute chestanu till the fat releases from the meat(keema, chicken ). I add the finely chopped cabbage and fry it together - no additional oil at all.

For Mutton pressure cook in a separate vessel in the cooker with masalas so you do not have to add water to the meat ... move to a frying pan , add cabbage and fry it together:-)

that's what i thought...just checking if there are any other alternatives......cabbage has a strong flavor...unlike onions which are mostly "neutral" after sautéing.....onions badulu cabbage vest non veg vandithe bagane vuntundaa?

Exactly same situation. Could not live without ghee. But with more ghee cholesterol goes up for me too. I Think it has more to do with your hereditary rather than just food habits. My father hardly used to eat ghee in his daily diet but still his cholesterol used to be borderline high.mine is usually on borderline but goes up with ghee intake.

So be a little careful - the numbers may not change but what those numbers translate into does change over time with new research findings :-)

Like you said egg yolks lo chol ekkuva ani bhayapettaru - ippudu malli dietary cholesterol does not translate to LDL antunnaru - I grew up eating an egg for breakfast every day and continued giving my kids the same :-) But everybody has different genetic propensities, different lifestyelse so what works for you may not work for others as well.

He consumed lots of vegetables and his diet was high on chillies. He was very careful so as not to consume oil-rich food or include ghee in his diet, as his cholesterol levels were high. He was prescribed anti-cholesterol drugs, which he had not started to take.

His routine - dry and fat/oil free diet, working in air-conditioned rooms, intake of (chilly) hot food, frequent travel etc. aggravated his shoulder problem, by increasing the Vayu in his body. He was advised to avoid all these. During the treatment, he was prescribed a medicated ghee as an internal medicine. He was advised to consume 30ml of this medicated ghee daily â 15 ml morning and evening on an empty stomach. The very mention of ghee bothered Ramesh. He was worried about his already high cholesterol but he was reassured and told that his shoulder condition, which was caused by an aggravation of Vayu, required this medication. For the next 4-5 weeks he was consuming the medicated ghee regularly and by the end of the treatment he had consumed nearly 1kg of this ghee medicine. By now, Ramesh was worried and curious about his cholesterol levels. He checked his lipid profile and found to his great surprise that his cholesterol and triglycerides had dropped with the help of the medicated ghee.

As can be seen here, all the levels, Total cholesterol, LDL (bad cholesterol), Triglycerides, and the TC/HDL ratio, are down and below the desirable levels. There is a marginal drop, of 1 point in the HDL (good cholesterol) level, but this too is above the desirable level.

Conclusion:

Here as a consequence of consuming medicated ghee, not only the vata problem got sorted out, but in fact cholesterol levels also dropped.

Sorry .oka vela okkokka body okkolaa respond avuthundemo. Nenu chepepdi naa vishyam lo 100% correct. Same habits and life style. Just changed ghee. It has been 2 years i tested like testing every 6 months before i came to the conclusion.

I am not against ghee. Actual gaa ghee lekapothe mudha digani paristhi naadi appatlo.

today my expreminet at home is to measure the temperature of oil at various knob positions (1 -10) and based on that chose my next cooking oil

i am buying a candy thermometer at target and already bought some oil to do pan heating..

i want to use extra virgin avocado oil which has smoke point of 400F for my medium to high cooking..i just dont want to use refine avocado oil for the sake of high smoke point of 500 F. If the oil dosent reach 400F when cooking at medium - hight cooking, then I will use extra virgin avocado oil which has all the antioxidants and goooood stuff in the oil while enjoying indian chiken curry

two reasons why i wont consume sesame is

1. its omega 6 content is tooo high and minima1 omega 3
2. its a vegetable oil which is usually not stable at high heats

refine sesame has 450 which is sutable for high heat cooking but its refined (chemical solvents used in extration and refuning process)

if u chose unrefined sesame smoke point is just 350 which is not good for high heat cooking

Sesame vadilesaru :-) Supposedly very good too .. I think I mentioned this once -couple years back oka restaurant lo kalisina Iranian peddayana chepparu - Type 2 diabetes completely reverse ayyindi anta with diet changes.. emiti ante first was switching completely over to sesame oil ani chepparu..
Grandparents sesame oil e vadevallu - so brought it back into our diets :-)

what ever u r using is very very bad oil..

always cook in a oil which is more saturated or high in monosaturated..

avoild oils which are vegetable oils and high in poly unsaturated fats.. those are least stable oils..

one more very very importantt factor to consider is omega6:omega3 content in your fats..

that ratio should be as close as 1:1..ghee has it..macadamia nut oil has that ratio..

omega 6 ekkuva unna oils will cause inflamation in your body..

best oils to cook:

1. ghee, coconut, avocado, macadamia,walnut

nenu cook chesedi anni ghee and coconut thone, i have a very very healthy cholestrol level and lipid profile

coconut oil and ghee are high in saturated fat and are one of the best cooking oils period..

because of saturated fat they are very stable in high heat cooking..coconut oil fats are MCT's which are reaily available for your body to use as energy...

mothers milk lo unde fat is exactly same as coconut oil fat lauric acid mct's..natural satirated fats are not bad.. again emphasis is on source..

processed foods lo unde saturated fat is bad..

I havent really looked deep into vitamin profile of ghee.. will take a look

I use ghee for high heat cooking and sometimes coconut oil for low heat cooking

planning to add avocado oil and macadamia nut oil too..just bought a bottle of avocado oil, cant wait to cook with it today
